This is an homage to my favorite “Middle Eastern” meal. To be honest, I tend to keep things plain and avoid the feta cheese, olives, and onions but I know normal people love those extra toppings and goodies so I included them in the design. When I was in high school, I went vegetarian for about a year and I ate so much hummus and falafel and tabbouleh. Unfortunately I also ate a lot of french fries because “hey, there’s not meat in fries!” and I just didn’t have a broad enough pallet to have a balanced diet. I’m getting better about it, but it’s still hard to find meatless meals that don’t comprise entirely of foods that make me ick.

But for serious, chickpeas are a miracle food. And not in a Dr Oz woo-woo way. They’re just super versatile!
